醬鹵制品專用色素是由大米、黃豆為原料，采用紅曲霉菌液體深層發(fā)酵和獨(dú)特的提取精制技術(shù)生產(chǎn)而出的一種色素。主要成份為紅曲紅色素、紅曲黃色素。
性狀：紅色或紅褐色粉末，溶于水，乙醇，不溶于油質(zhì)；易吸潮，吸潮后結(jié)塊，但不影響使用效果。
應(yīng)用：天然食用色素，主要用于：川味鹵味、川味鹵鳳爪、醬鹵肉制品、鹵蛋類、溫州風(fēng)味產(chǎn)品(如“鄉(xiāng)吧佬”)醬調(diào)料品等。
使用方法：將本品按所需用量直接用水或食用酒精溶解，然后加入配料中著色，混合均勻即可，用量按產(chǎn)品的色調(diào)要求調(diào)整(以自己實(shí)際情況而定)。
質(zhì)量指標(biāo)：
包裝：200g、5kg等規(guī)格的鋁箔袋包裝，外箱為10kg紙箱?？梢愿鶕?jù)客戶要求包裝。
儲(chǔ)存及保質(zhì)期：應(yīng)密封，置于通風(fēng)、陰涼、干燥處，嚴(yán)防光照、受熱，禁止與有毒物品混合存放。在包裝完整且未經(jīng)啟封情況下，保質(zhì)期為二年。
