經(jīng)我司大量調(diào)研發(fā)現(xiàn)，加長(zhǎng)本機(jī)的長(zhǎng)度可使蒸汽噴射流量分布更合理，面條糊化更均勻、糊化度更高、耗汽量低、性能穩(wěn)定可靠，易于清理，還增加了蒸面自動(dòng)清洗裝置，減少了人工清洗蒸網(wǎng)的工作量，使調(diào)整維護(hù)等更方便。本機(jī)全身采用不銹鋼材料制作而成，符合食品衛(wèi)生要求。
本機(jī)的主要作用是把連續(xù)壓片機(jī)輸出的波紋面帶，接放在不銹鋼網(wǎng)帶上，經(jīng)連續(xù)蒸煮成熟面(一般稱(chēng)為糊化工序)。通常情況下，淀粉的結(jié)構(gòu)主要是鏈淀粉(淀粉分子結(jié)構(gòu)的一種連接形式)。但在一定條件下，即含水量增加到一定值，溫度升高，即利用減壓后的0.o3mpa的飽和蒸汽(約95 ~ 100℃)，再經(jīng)過(guò)一定的時(shí)間蒸煮(約135 ~l45秒)，淀汾中的鏈淀粉結(jié)構(gòu)就會(huì)分解成支淀粉結(jié)構(gòu)(是一種不定形的分子排列，如樹(shù)枝、海綿狀的結(jié)構(gòu))，這個(gè)過(guò)程叫做糊化。接著通過(guò)約2m長(zhǎng)的輸送帶風(fēng)冷后送到下工序。

through our extensive survey, lengthening the length of this machine can make steam injection flow distributed more reasonably, noodles gelatinization more uniform, and get higher gelatinization degree, low steam consumption , more stable and reliable performance, and easy to clean, at the same time, adding automatic cleaning device decreased the artificial cleaning work of the steam net, make adjustment and maintenance etc more conveniently. the machine body is made of all stainless steel materials, according with food health requirements.
the main function of this machine is to put the corrugated noodles output by continuous rolling machine on the stainless steel net, and then steam them continuously until they become cooked noodles (commonly called gelatinization process). normally, starch structure is mainly amylose (a kind of connection form of starch molecular structure). but under certain condition, that is the water content and temperature increase to a certain level, or making use of saturated vapor (about 95-100℃) which has been decompressed to 0.03mpa, and after braizing for a certain time (about 135-145 seconds), the amylose structure will be decomposed into amylopectin structure (is a kind of amorphous molecules arrangement, like the branches, spongy structure), this process is called gelatinization. and then the products will be sent to the next process after they are wind-cooled through about 2m-long conveying belt.
