resveratrol(3,5,4"-trihydroxystilbene) is a polyphenolic phytoalexin. it is astilbenoid, a derivate of stilbene, and is produced in plants withthe help of the enzyme stilbene synthase. it exists as twogeometric isomers: cis- (z) and trans- (e), with the trans-isomershown in the top image. the trans- form can undergo isomerisationto the cis- form when exposed to ultraviolet irradiation.trans-resveratrol in the powder form was found to be stable under"accelerated stability" conditions of 75% humidity and 40 degrees cin the presence of air. resveratrol content also stayed stable inthe skins of grapes and pomace taken after fermentation and storedfor a long period.

acetyl-resveratrol is a derivative of theresveratrol (trans-). the resveratrol’s hydroxyls are replaced byacetyls. acetyl –resveratrol is called prodrug on medicinalchemistry. acetyl-resveratrol is more stable thantrans-resveratrol. when absorbed, it returns to resveratrol underaction of metabolism. scientists have started analyzing thesenaturally occurring analogs to determine why it is they seem to beso biologically active and important. what they found was thatamong these analogs, acetylated phenolics exhibited a higher levelof activity that is attributed to faster absorption and greatercellular uptake. the existence of these acetylated phenoliccompounds in natural sources has been established in many recentstudies and the comparative data is being studied extensively. sofar the naturally occurring acetylated derivatives of resveratrolhave been identified in plants and specifically, triacetylatedresveratrol has been found in marine invertebrates.
